This Ultra Premium extra virgin olive oil is produced entirely from green olives we harvest from our groves in October near the Corinthian sea. It is high in chlorophyll which explains its green color and grassy flavor. The high concentration of polyphenols impart a vibrant and alive flavor. Because green olives don't contain much olive oil, it is inevitably more expensive to produce.
It is supreme as a finishing oil on salads, grilled/steamed vegetables, grilled fish/meat at the last minute.
